Lavender Chocolates

This sweet-smelling plant is also a classic flavoring for chocolates although it is not quite as chic these days as it once was, it still is an amazing Essential Oil to use when making your own chocolate! The sweet, warm, aromatic quality of lavender mixes impeccably with the bitterness of the dark chocolate making a subtly aromatic blend that is quite delicious.

I generally use a 3ml amount of Essential oil in one batch of chocolate but sometimes I will add more depending on the taste I want it to be.

Please find below the recipe I use for the chocolates. (my good friend Harlan Sparer taught me this formula it is amazing)!!

You can use other Oils as well such as Orange, Turmeric, Peppermint are just a few I have used in making mine.

3 cups raw cacao butter

2 cups raw cacao powder
1 cup agave nectar

1 teaspoon vanilla powder
3ml Organic Lavender Essential Oil

Some may also want to add a pinch of sea salt.

Melt the butter gently in a double boiler and when it is completely liquid stir in the cacao powder and agave syrup until well mixed and the consistency of melted chocolate – just remember, be careful not to overheat or the consistency will begin to turn a little grainy and ‘cooked’. (do not let it boil) always keep on low. When melted and blended well you can turn off heat and remove from stove, then add in 3ml of organic lavender essential oil, then stir well. Using a spoon, or whatever you wish to use fill your molds and pop in the fridge for an hour or so before digging in. It really couldn’t be simpler!
